This super soup is full of iron so a superb dinner for a growing baby! I've also pushed this recipe to friends who are breastfeeding and pregnant too. My mother-in-law was a little intimidated by the “toxic looking colour” but was surprised how good it tasted! I’ll take that as a win. You can freeze this soup in small cartons to serve at a later date and also mix it with some pasta to use as a pasta sauce. Getting your kids onto soup early is a great idea, because it's so versatile. Warming on a winters' day, it gives you the opportunity to use up any leftover veg and add if you add pulses (e.g. red lentils) or meat it becomes a hearty meal. Yes, it can be messy with children who've only just started to wean but make it thick and give them bread to dip in it and it could become a staple lunchtime meal.
