I always have these ingredients in the house (pasta, flour and milk) so this a great standby-by recipe. Plus it only takes 20 minutes to make. I first remember my Best-Friend’s Mum making this when I was about six  - I always insisted on staying for dinner as the smell of it cooking under the grill was irresistible! This is what we call our “New York Breakfast” (also known as Drop scones and Scotch pancakes). Before Emily, I used to make a Lorraine Pascal’s pancakes. The recipe included tablespoons of sugar (note plural!), a vanilla pod all of which were a no no once our daughter came along as I had visions of her bouncing off the ceiling from all the sugar! Cheese and spinach muffins

  These are a great idea to bake if you have a bag of spinach left over and need to think of more creative ways to use it up! These muffins are fab as you can stick them in the freezer and just get them out one at a time. I like to warm them in the microwave for a few mins and the cheese will go gooey again!
