This is what we call our “New York Breakfast” (also known as Drop scones and Scotch pancakes). Before Emily, I used to make a Lorraine Pascal’s pancakes. The recipe included tablespoons of sugar (note plural!), a vanilla pod all of which were a no no once our daughter came along as I had visions of her bouncing off the ceiling from all the sugar!   These are a great idea to bake if you have a bag of spinach left over and need to think of more creative ways to use it up! These muffins are fab as you can stick them in the freezer and just get them out one at a time. I like to warm them in the microwave for a few mins and the cheese will go gooey again!
